Do you actually have a background in wine? I'm a certified sommelier. Chaptalization, or the adding of additional sugar, is not done to improve flavor, but to increase potential alcohol levels. The only reason I point this out is that this article would be scrutinized in this way because it is put forth as something of an educational tool
